Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with tender steamed green beans and a creamy garlic cauliflower mash, finished with a squeeze of fresh lemon for a bright, zesty touch.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
1.5 tsp Extra Virgin Olive Oil
1 tsp Ghee
2 tbsp Non-fat Plain Greek Yogurt
1 clove Garlic
PREPARATION
Place the cauliflower florets and the peeled garlic clove in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While the cauliflower steams, add the green beans to the steamer for the last 5 minutes of cooking until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side up for 4 minutes, then flip and cook for another 3-4 minutes until the skin is crispy and the fish is cooked through.
Transfer the steamed cauliflower and garlic to a food processor or bowl, adding the ghee and Greek yogurt, then blend or mash until smooth and creamy.
Serve the seared salmon alongside the garlic mashed cauliflower and steamed green beans, garnishing with a fresh lemon wedge if desired.
