1.5 cups Broccoli florets
1.2 cups Cauliflower florets

PREPARATION
Preheat your oven to 400°F (200°C).
Toss the broccoli florets with half of the olive oil, salt, and pepper on a baking sheet.
Roast the broccoli for 15-20 minutes until the edges are charred and tender.
While the broccoli roasts, steam the cauliflower florets until they are very soft, about 10 minutes.
Drain the cauliflower well and mash or blend with the ghee and a pinch of salt until smooth and velvety.
Pat the salmon dry and season both sides with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
