Dip the chicken breast into the egg wash, ensuring it is fully coated, then dredge it through the almond flour mixture, pressing firmly so the coating adheres.
Place the breaded chicken on the prepared baking sheet and drizzle or spray with olive oil to help it crisp up.
Bake for 15 to 18 minutes, or until the chicken is cooked through and the crust is golden brown.
Remove from the oven and spoon the marinara sauce over the center of the chicken, then sprinkle with the shredded mozzarella cheese.
Return to the oven for an additional 3 to 5 minutes until the cheese is melted and bubbly.
While the cheese melts, lightly sauté the zucchini noodles in a pan for 2 minutes until just tender.
Serve the crispy chicken parmesan over the bed of zucchini noodles immediately.
