Seared Salmon with Garlic Green Beans and Quinoa
Pan-seared salmon served over fluffy quinoa with fresh green beans sautéed in garlic, finished with a bright squeeze of zesty lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon fillet
0.5 cup Cooked Quinoa
1 cup fresh Green Beans, trimmed
1.5 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp fresh Lemon Juice
PREPARATION
Pat the salmon fillet completely dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
While the salmon cooks, heat the remaining half teaspoon of olive oil in a separate small skillet over medium heat.
Add the green beans and a splash of water, covering for 2 minutes to steam-soften.
Remove the lid, add the minced garlic to the green beans, and sauté for 2 more minutes until the beans are tender-crisp and the garlic is fragrant.
Warm the pre-cooked quinoa in a bowl or small pot.
Plate the salmon alongside the quinoa and garlic green beans, drizzling the fresh lemon juice over the fish and vegetables before serving.
