Seared Salmon Fillet with Garlic Sautéed Spinach and Sweet Potato Mash
Pan-seared salmon served with creamy mashed sweet potatoes and garlic-infused spinach, finished with a squeeze of fresh lemon for a bright, zesty touch.
INGREDIENTS
5.5 oz Salmon Fillet
200g Sweet Potato
2 cups Fresh Spinach
1 tbsp Avocado Oil
0.5 tbsp Grass-fed Butter
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in salted water until tender.
Drain the sweet potato and mash with grass-fed butter until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat avocado oil in a large skillet over medium-high heat and place the salmon skin-side down.
Sear the salmon for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
Add the fresh spinach to the skillet and toss until just wilted.
Serve the seared salmon over the sweet potato mash with the sautéed spinach on the side, finishing with a fresh squeeze of lemon juice.
