Garlic Herb Butter Steak with Asparagus
Pan-seared sirloin steak basted in aromatic garlic ghee and fresh rosemary, served alongside tender pan-roasted asparagus for a meal that is buttery and rich.
INGREDIENTS
6 oz Grass-fed sirloin steak
1 tsp Ghee
1 cup Asparagus spears
2 cloves Garlic
1 sprig Fresh rosemary
0.5 tsp Sea salt
0.25 tsp Black pepper
1 tsp Avocado oil
PREPARATION
Pat the sirloin steak dry with paper towels and season both sides with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat and add the avocado oil.
Once the pan is shimmering, sear the steak for 3-4 minutes per side until a golden-brown crust forms.
Lower the heat to medium and add the ghee, smashed garlic cloves, and rosemary sprig to the pan.
Tilt the pan and use a spoon to continuously baste the steak with the melted garlic herb butter for 2 minutes.
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes.
In the same skillet, toss the asparagus spears in the remaining herb butter and sauté for 4-5 minutes until bright green and tender-crisp.
Slice the steak against the grain and serve immediately with the buttery asparagus.
