Seared Salmon with Garlic Green Beans and Herb Rice
Pan-seared salmon fillet served with garlic-sautéed green beans and herb-flecked brown rice, finished with a squeeze of lemon for a dish that is wonderfully buttery.
INGREDIENTS
4 oz Wild Atlantic Salmon Fillet
3/4 cup Cooked Brown Rice
1 cup Fresh Green Beans
1 tbsp Extra Virgin Olive Oil
1 tsp Grass-fed Butter
2 cloves Garlic
1 tbsp Fresh Parsley
PREPARATION
Cook the brown rice according to package instructions until tender.
Once the rice is cooked, stir in the grass-fed butter and finely chopped fresh parsley.
Trim the ends of the green beans and mince the garlic cloves.
Heat half of the olive oil in a large skillet over medium-high heat.
Season the salmon fillet with a pinch of sea salt and black pepper, then sear for 4 to 5 minutes per side until the skin is crisp and the flesh is opaque.
Remove the salmon from the pan and set aside to rest.
Add the remaining olive oil to the same skillet and sauté the green beans for 5 minutes.
Add the minced garlic to the beans and cook for an additional minute until fragrant.
Serve the seared salmon over the herb rice with the garlicky green beans on the side.
