PREPARATION
Preheat oven to 400°F.
Cut salmon into 1-inch cubes and thinly slice the red bell pepper.
Toss the salmon, peppers, olive oil, salt, pepper, and paprika in a small oven-safe baking dish until well coated.
Roast the mixture for 10 minutes until the peppers are tender and the salmon is partially cooked.
Stir in the baby spinach until it begins to wilt into the warm salmon and pepper mixture.
Create three small wells in the dish and crack one egg into each opening.
Sprinkle the crumbled feta cheese over the top and bake for 8 to 10 minutes until the whites are set but yolks remain runny.
