Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served alongside garlicky sautéed green beans and a velvety sweet potato mash, finished with a bright squeeze of lemon.
INGREDIENTS
7 ounces Salmon Fillet
150 grams Sweet Potato
100 grams Green Beans
1 teaspoon Olive Oil
1 clove Garlic
PREPARATION
Peel and chop the sweet potato into small cubes and boil in water until tender.
Drain the water and mash the sweet potato until smooth, seasoning with a pinch of sea salt.
Pat the salmon fillet dry and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 minutes until the skin is crispy, then flip and cook for another 3 minutes.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the green beans and minced garlic, sautéing for 5 minutes until tender-crisp.
Serve the salmon over the sweet potato mash with the garlic green beans on the side.
