Lemon Herb Chicken with Creamy Tzatziki
Tender chicken breast pan-seared with aromatic herbs and lemon, served with a cooling, velvety tzatziki sauce for a bright and satisfying meal.
INGREDIENTS
3 oz Chicken breast
1 tbsp Extra virgin olive oil
1 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 cup Non-fat Greek yogurt
0.5 cup Grated cucumber
1 clove Minced garlic
1 tbsp Fresh lemon juice
1 tbsp Chopped fresh dill
PREPARATION
Pat the chicken breast dry with paper towels and season both sides evenly with dried oregano, sea salt, and black pepper.
Heat the extra virgin olive oil in a medium skillet over medium-high heat.
Place the chicken in the skillet and cook for 6 to 7 minutes per side, or until the internal temperature reaches 165°F and the exterior is golden brown.
While the chicken cooks, place the grated cucumber in a clean kitchen towel or fine mesh sieve and squeeze firmly to remove as much excess moisture as possible.
In a small mixing bowl, combine the Greek yogurt, strained cucumber, minced garlic, lemon juice, and fresh dill, stirring until smooth.
Remove the chicken from the pan and let it rest for 3 minutes before slicing into strips.
Serve the warm lemon herb chicken topped with a generous portion of the chilled tzatziki sauce.
