0.25 cup Fresh basil leaves

1 clove Garlic

1 cup Asparagus spears
PREPARATION
Preheat your oven to 400°F (200°C).
Slice the pork tenderloin lengthwise, being careful not to cut all the way through, and open it like a book.
Layer the fresh mozzarella slices and basil leaves evenly inside the pork.
Fold the pork back together and secure with kitchen twine or toothpicks to keep the filling inside.
Mince the garlic and rub it over the outside of the pork along with half of the olive oil, salt, and pepper.
Place the pork in a roasting pan and surround it with the asparagus spears tossed in the remaining oil and seasonings.
Roast for 20-25 minutes or until the pork reaches an internal temperature of 145°F.
