Wash the potato and dice it into small 1/2-inch cubes to ensure even and quick cooking.
Dice the zucchini into half-moons and leave the cherry tomatoes whole.
Heat the extra virgin olive oil in a large non-stick skillet over medium-high heat.
Add the diced potatoes to the skillet and cook for 8-10 minutes, stirring occasionally, until they are golden brown and tender.
Push the potatoes to one side of the pan and add the ground turkey to the empty space, breaking it up with a spatula.
Season the entire pan with sea salt, black pepper, garlic powder, and dried oregano.
Cook the turkey until browned and no longer pink, approximately 5-7 minutes.
Stir in the zucchini and cherry tomatoes, mixing them with the turkey and potatoes.
Sauté for an additional 4-5 minutes until the zucchini is tender-crisp and the cherry tomatoes begin to soften and burst.
Remove from heat and serve immediately.
