While the vegetables roast, place the chopped kale in a bowl with a splash of lemon juice and massage with your hands for 1-2 minutes until the leaves are dark green and tender.
In a small ramekin, whisk the tahini with a teaspoon of warm water and the remaining lemon juice until smooth and pourable.
Assemble the bowl by placing the massaged kale at the bottom, topping with the roasted tofu and veggie mix, and finishing with a sprinkle of hemp hearts and the tahini drizzle.
