1 tbsp lemon juice
PREPARATION
Bring a large pot of salted water to a boil and cook the whole grain penne according to package directions until al dente.
While the pasta cooks, dice the chicken breast into bite-sized pieces and season with sea salt, black pepper, and dried oregano.
Heat the extra virgin olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and sauté for 5-7 minutes until golden brown and cooked through.
Lower the heat to medium and add the minced garlic, stirring constantly for 1 minute until aromatic.
Drain the pasta, reserving 2 tablespoons of the cooking water, and add both to the skillet with the chicken.
Toss in the fresh spinach and stir until just wilted from the heat of the pasta.
Remove from heat and stir in the fresh parsley and lemon juice before serving warm.
