200g Cauliflower florets
100g Green beans
1 tsp Extra virgin olive oil
1 tbsp Nonfat Greek yogurt
Salt, pepper, and lemon to taste
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very soft.
While cauliflower cooks, steam the green beans for 5-6 minutes until crisp-tender and bright green.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached.
Drain the steamed cauliflower and transfer to a bowl; mash thoroughly with the Greek yogurt until smooth and creamy.
