0.5 tbsp Extra virgin olive oil
1 tbsp Calabrian chili paste
2 cloves Garlic
0.5 cup Cherry tomatoes
1 tbsp Fresh parsley
0.5 whole Lemon
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Boil a pot of salted water and cook the linguine according to package directions until al dente. Reserve 0.25 cup of pasta water before draining.
Heat olive oil in a large skillet over medium-high heat. Season the shrimp with sea salt and black pepper.
Add the shrimp to the skillet and sear for 2 minutes per side until pink and opaque. Remove the shrimp and set aside.
In the same skillet, add minced garlic, halved cherry tomatoes, and Calabrian chili paste. Sauté for 3 minutes until the tomatoes begin to soften and burst.
Deglaze the pan with the juice of the half lemon and the reserved pasta water, scraping up any browned bits from the bottom.
Return the shrimp to the pan along with the cooked linguine. Toss everything together for 1 minute until the sauce coats the pasta beautifully.
