Garlic Herb Butter Steak with Asparagus
Pan-seared grass-fed sirloin basted in a fragrant garlic-herb ghee, served alongside tender-crisp roasted asparagus for a savory and satisfying meal.
INGREDIENTS
6 oz Grass-fed sirloin steak
1 tbsp Ghee
1 cup Asparagus spears
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
1 tsp Avocado oil
PREPARATION
Pat the sirloin steak completely dry with paper towels and season both sides evenly with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat with the avocado oil until the oil is shimmering and just beginning to smoke.
Carefully place the steak in the hot skillet and sear undisturbed for 3 to 4 minutes to develop a deep brown crust.
Flip the steak and immediately add the ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the skillet slightly and use a large spoon to continuously baste the steak with the melting herb-infused ghee for the remaining 2 to 3 minutes of cooking.
Transfer the steak to a cutting board and let it rest for at least 5 minutes to allow the juices to redistribute.
While the steak rests, toss the asparagus spears into the same skillet with the remaining garlic-herb butter and sauté for 4 minutes until bright green and tender.
Slice the steak against the grain and serve immediately alongside the buttery asparagus.
