Classic Beef Stroganoff with Egg Noodles
Tender beef sirloin strips and earthy cremini mushrooms are sautéed and simmered in a velvety Greek yogurt sauce, served over a bed of silky egg noodles.
INGREDIENTS
5 oz beef sirloin strips
0.25 tbsp ghee
1 cup cremini mushrooms
0.25 cup yellow onion
1 clove garlic
0.5 cup beef broth
1 tsp dijon mustard
0.25 cup plain greek yogurt
0.25 cup cooked egg noodles
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp fresh parsley
PREPARATION
Heat the ghee in a large skillet over medium-high heat until melted.
Add the sliced mushrooms and diced onions to the skillet, sautéing for 5 minutes until the onions are translucent and mushrooms have browned.
Season the beef strips with sea salt and black pepper, then add them to the skillet, searing quickly for 2-3 minutes until browned on all sides.
Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the beef broth and Dijon mustard, scraping any browned bits from the bottom of the pan, and simmer for 4 minutes to reduce the liquid slightly.
Remove the skillet from the heat and allow it to cool for one minute before stirring in the Greek yogurt to create a creamy sauce.
Place the warm egg noodles in a bowl and top with the beef and mushroom mixture.
Garnish with freshly chopped parsley before serving.
