Baked Apples with Vanilla Protein Crumble
Tender apples roasted with a crunchy vanilla protein oat crumble and served with a dollop of creamy Greek yogurt for a warm, satisfying treat.
INGREDIENTS
1 medium Honeycrisp apple
1.25 scoop Vanilla protein powder
0.25 cup Rolled oats
0.5 tbsp Almond butter
0.5 cup Non-fat Greek yogurt
1 tsp Maple syrup
0.5 tsp Ground cinnamon
0.25 tsp Ground nutmeg
1 tbsp Water
PREPARATION
Preheat your oven to 375°F (190°C).
Slice the top off the apple and use a spoon or apple corer to remove the seeds and core, creating a hollow center while leaving the bottom intact.
In a small mixing bowl, combine the vanilla protein powder, rolled oats, almond butter, cinnamon, nutmeg, maple syrup, and water until a thick, crumbly paste forms.
Pack the protein crumble mixture tightly into the hollowed-out center of the apple, piling any extra on top.
Place the stuffed apple in a small oven-safe baking dish and add a splash of water to the bottom of the dish to keep the apple moist.
Bake for 25 to 30 minutes, or until the apple is tender when pierced with a fork and the crumble is golden brown.
Remove from the oven and let cool for a few minutes before serving with a side of cold Greek yogurt.
