PREPARATION
Season the sirloin steak generously with sea salt and black pepper on both sides.
Heat the olive oil in a cast-iron skillet over medium-high heat until it begins to shimmer.
Place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare, or until your desired level of doneness is reached.
While the steak cooks, steam or lightly sauté the asparagus in a separate pan with a splash of water until tender and bright green.
Reduce the skillet heat to medium and add the ghee, smashed garlic cloves, rosemary, and thyme.
