150g Sweet Potato
100g Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Lemon Juice

PREPARATION
Peel and cube the sweet potato, then place in a pot of boiling water and cook until tender, about 10-12 minutes.
Drain the sweet potato and mash thoroughly until smooth, seasoning with a pinch of sea salt and black pepper.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crisp and the flesh is cooked through.
Remove the salmon from the pan and add the remaining olive oil along with the green beans and minced garlic.
