Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper, lightly greasing it with 1 teaspoon of olive oil.
Grate the zucchini using a box grater until you have 1 full cup. Place the shredded zucchini in a clean kitchen towel or cheesecloth and squeeze vigorously to remove as much moisture as possible.
In a large mixing bowl, combine the ground chicken, squeezed zucchini, egg, almond flour, garlic powder, onion powder, sea salt, and black pepper.
Mix the ingredients by hand until just combined, being careful not to overwork the meat which can make the patties tough.
Divide the mixture into 4 or 5 equal portions and shape them into patties about 1/2 inch thick.
Place the patties on the prepared baking sheet and bake for 18 to 20 minutes, or until the internal temperature reaches 165°F and the tops are lightly golden.
Remove from the oven and let rest for 3 minutes before serving to allow the juices to redistribute.
