Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served with garlicky green beans and creamy mashed sweet potato, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
7.4 oz Salmon Fillet
120g Sweet Potato, peeled and cubed
100g Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Peel and cube the sweet potato, then place in a pot of boiling water and cook until fork-tender.
Drain the sweet potato and mash thoroughly until smooth, adding a pinch of sea salt if desired.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes per side until the exterior is golden and the fish flakes easily.
Remove the salmon from the pan and set aside.
Add the remaining olive oil to the same skillet along with the green beans and minced garlic.
Sauté the green beans for about 5 minutes until they are tender-crisp and the garlic is fragrant.
Plate the salmon alongside the sweet potato mash and garlic green beans, serving immediately with a fresh lemon wedge.
