Classic Beef Stroganoff with Egg Noodles
Tender strips of lean beef and earthy mushrooms are sautéed and simmered in a velvety Greek yogurt sauce, served over a bed of golden egg noodles.
INGREDIENTS
3 oz Top sirloin steak
1 cup Cremini mushrooms
0.5 cup Yellow onion
1 clove Garlic
0.5 cup Low-sodium beef broth
0.25 cup Non-fat plain Greek yogurt
0.5 tsp Extra virgin olive oil
0.25 cup Egg noodles
0.5 tsp Sea salt
0.25 tsp Black pepper
1 tsp Dijon mustard
1 tbsp Fresh parsley
PREPARATION
Bring a pot of water to a boil and cook the egg noodles according to package directions; drain and set aside.
Slice the sirloin into thin strips and season with half of the sea salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat and sear the beef until browned, then remove from the pan.
In the same skillet, add the diced onions and sliced mushrooms, sautéing until the onions are translucent and mushrooms are tender.
Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the beef broth and Dijon mustard, scraping the bottom of the pan to release the browned bits, and simmer for 3-5 minutes.
Reduce heat to low, stir the beef back into the skillet, and fold in the Greek yogurt until the sauce is creamy and heated through.
Serve the beef and mushroom mixture over the cooked egg noodles and garnish with fresh chopped parsley.
