Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
In a small mixing bowl, whisk together the honey, minced garlic, tamari, hoisin sauce, grated ginger, five spice powder, and sesame oil until smooth.
Season the pork tenderloin with sea salt and black pepper, then brush half of the honey-garlic marinade over the entire surface of the meat.
Place the pork on the prepared baking sheet and roast for 12 minutes.
Remove the pork from the oven, brush with the remaining marinade, and return to the oven for another 10-13 minutes until the internal temperature reaches 145°F.
While the pork roasts, steam the baby bok choy for 3-5 minutes until the stalks are tender and leaves are bright green.
Let the pork rest for at least 5 minutes to lock in juices before slicing into thin medallions.
Serve the sliced pork over the warm cooked brown rice with the steamed bok choy on the side.
