8 oz Wild Atlantic Salmon fillet
2 cups Cauliflower florets
10 Asparagus spears
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
2 cloves Garlic, minced

PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
While the cauliflower is steaming, season the salmon fillet on both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side up and sear for 4 to 5 minutes until a golden crust forms.
Flip the salmon and cook for another 3 to 4 minutes until cooked through to your preference.
In the last 5 minutes of cooking the salmon, steam the asparagus spears until they are bright green and tender-crisp.
Drain the steamed cauliflower thoroughly and place in a food processor or blender with the ghee, minced garlic, and a pinch of salt. Process until smooth and creamy.
