Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served with garlic-sauteed green beans and a smooth sweet potato mash, finished with a squeeze of bright lemon.
INGREDIENTS
8 oz Salmon Fillet
200g Sweet Potato
1 cup Green Beans
1 tbsp Avocado Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in water until tender, about 12-15 minutes.
Drain the sweet potato and mash until smooth, seasoning with a pinch of sea salt.
Heat a skillet over medium-high heat with half of the avocado oil.
Season the salmon fillet with salt and pepper, then sear for 4-5 minutes per side until golden and cooked through.
Remove salmon from the pan and add the remaining oil to the same skillet.
Sauté the green beans and minced garlic for 5-7 minutes until the beans are tender-crisp and fragrant.
Plate the salmon alongside the sweet potato mash and green beans, serving with a fresh lemon wedge.
