Sesame-Ginger Chicken Stir-Fry
Sautéed chicken breast and crisp vegetables tossed in a zesty ginger-sesame glaze for a meal that is vibrantly colorful and satisfying.
INGREDIENTS
4.25 oz chicken breast
1 tsp toasted sesame oil
1 tbsp coconut aminos
1 tsp fresh ginger
1 clove garlic
1 cup broccoli florets
0.5 cup red bell pepper
0.5 cup snap peas
0.25 cup cooked brown rice
1 tsp sesame seeds
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Slice chicken breast into thin, even strips and season with sea salt and black pepper.
Heat toasted sesame oil in a large skillet or wok over medium-high heat until shimmering.
Add chicken to the pan and sear until golden brown and cooked through, about 5-6 minutes.
Remove chicken from the pan and set aside; add broccoli, bell pepper, and snap peas to the same pan.
Stir-fry vegetables for 3-4 minutes until tender-crisp, then stir in minced ginger and garlic for 30 seconds.
Return chicken to the pan, drizzle with coconut aminos, and toss everything together until well-coated.
Serve the stir-fry over warm brown rice and garnish with a sprinkle of sesame seeds.
