Pan-Seared Salmon with Garlic Spinach
Pan-seared salmon fillet and sautéed garlic spinach served with a zesty squeeze of fresh lemon for a light and nourishing meal.
INGREDIENTS
7 oz Salmon fillet
1 tbsp Extra virgin olive oil
2 cups Fresh baby spinach
2 cloves Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 whole Lemon
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with the sea salt and black pepper.
Heat half of the olive oil in a large skillet over medium-high heat until it begins to shimmer.
Place the salmon in the pan and sear for 4 to 5 minutes until the skin is crispy and golden.
Flip the salmon and cook for another 2 to 3 minutes until the fish is opaque and flakes easily with a fork.
Transfer the salmon to a plate and add the remaining olive oil and the minced garlic to the same skillet.
Sauté the garlic for 30 seconds until fragrant, then add the fresh baby spinach and toss until just wilted.
Plate the salmon over the bed of garlic spinach and finish with a fresh squeeze of lemon juice.
