1 tbsp Extra virgin olive oil
2 cloves Garlic
0.5 tsp Dried rosemary
0.5 tsp Dried thyme
0.25 tsp Sea salt

1 cup Broccoli florets
0.5 cup Sweet potato
1 tsp Lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Peel and cube the sweet potato into 1/2-inch pieces, then toss them on the sheet with 0.5 tbsp of olive oil and a pinch of salt.
Roast the sweet potatoes for 10 minutes to give them a head start.
While potatoes roast, mince the garlic and combine it with the remaining 0.5 tbsp olive oil, rosemary, thyme, salt, and pepper.
Rub the chicken breast thoroughly with the garlic-herb oil mixture.
Move the potatoes to one side of the tray and add the chicken breast and broccoli florets to the other side.
Return the tray to the oven and roast for 18-22 minutes, or until the chicken reaches an internal temperature of 165°F.
Remove from the oven, drizzle the lemon juice over the chicken and vegetables, and let the meat rest for 5 minutes before slicing.
