Turkey Mince Lettuce Wraps with Peanut Sauce
Sautéed ground turkey and crisp vegetables are drizzled with a velvety peanut sauce and served in fresh lettuce cups for a vibrant, crunch-filled meal.
INGREDIENTS
8 oz Ground turkey
1 tbsp Creamy peanut butter
1 tbsp Coconut aminos
1 tsp Toasted sesame oil
1 tsp Fresh ginger
1 clove Garlic
0.25 tsp Red pepper flakes
1 tbsp Lime juice
4 large Butter lettuce leaves
0.25 cup Shredded carrots
2 tbsp Green onions
1 tbsp Water
PREPARATION
In a small bowl, whisk together the creamy peanut butter, coconut aminos, lime juice, and water until the sauce is smooth and pourable.
Heat the toasted sesame oil in a large skillet over medium-high heat until shimmering.
Add the ground turkey to the skillet and cook, breaking it into small crumbles with a spatula, until browned and no longer pink.
Add the minced garlic, grated fresh ginger, and red pepper flakes to the turkey and sauté for 1 to 2 minutes until very fragrant.
Remove the skillet from the heat and stir in half of the prepared peanut sauce to coat the turkey mince evenly.
Arrange the butter lettuce leaves on a serving plate and spoon the turkey mixture into the center of each leaf.
Garnish the wraps with shredded carrots and sliced green onions, then drizzle with the remaining peanut sauce before serving.
