Preheat your oven to 400°F (200°C).
Scrub the potato clean, prick it several times with a fork, and rub the skin with olive oil and a pinch of sea salt.
Place the potato directly on the oven rack and bake for 45 to 50 minutes until the skin is crisp and the center is tender.
While the potato is roasting, brown the ground turkey in a non-stick skillet over medium heat until fully cooked, seasoning with the remaining salt and pepper.
Cook the turkey bacon in the same skillet or a separate pan until crispy, then chop or crumble it into small bits.
Once the potato is done, slice it in half lengthwise and carefully scoop out the flesh into a mixing bowl, leaving a thin layer against the skin.
Mash the potato flesh with half of the Greek yogurt and the cooked ground turkey until well combined.
Spoon the mixture back into the potato skins and top with the shredded cheddar cheese.
Return the stuffed potatoes to the oven for 5 minutes, or until the cheese has melted and is slightly bubbly.
Top each potato half with the remaining Greek yogurt, crumbled turkey bacon, and fresh chives before serving.
