INGREDIENTS
5.5 oz Salmon Fillet
150g Sweet Potato
2 cups Fresh Spinach
1 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato then boil in water until tender for approximately 12 minutes.
Drain the sweet potatoes and mash until smooth and creamy with a pinch of sea salt.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 minutes per side until golden.
Remove the salmon from the pan and add the remaining oil to sauté the minced garlic for 30 seconds.
Add the spinach to the skillet and toss until just wilted then serve immediately alongside the salmon and mashed sweet potato.
