Garlic Parmesan Chicken Alfredo Pasta
Pan-seared chicken breast tossed with whole wheat pasta in a velvety garlic-parmesan yogurt sauce, finished with a sprinkle of fresh parsley.
INGREDIENTS
4.5 oz Chicken breast
0.75 cup Whole wheat penne
0.5 tbsp Olive oil
2 tbsp Plain Greek yogurt
1.5 tbsp Parmesan cheese
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh parsley
2 tbsp Pasta water
PREPARATION
Bring a large pot of salted water to a boil and cook the whole wheat penne according to package directions until al dente.
While the pasta cooks, cut the chicken breast into bite-sized pieces and season with sea salt and black pepper.
Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden brown and cooked through, about 5-7 minutes.
Reduce heat to low, add the minced garlic to the skillet, and sauté for 30 seconds until fragrant.
In a small bowl, whisk together the Greek yogurt, grated parmesan cheese, and reserved warm pasta water until smooth.
Add the cooked pasta and the yogurt mixture to the skillet with the chicken, tossing gently until the sauce is creamy and coats every noodle.
Garnish with freshly chopped parsley and serve immediately.
