Tender whole-grain noodles layered with a savory grass-fed beef ragu and creamy herbed ricotta for a comforting, bubbly finish.
INGREDIENTS
4 oz Ground beef (93% lean)
0.5 sheet Whole wheat lasagna noodles
0.13 cup Part-skim ricotta cheese
1 large Egg
0.5 cup Marinara sauce
0.5 oz Part-skim mozzarella cheese
1 tbsp Fresh basil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
1 cup Fresh baby spinach
0 tsp Extra virgin olive oil
PREPARATION
Preheat your oven to 375°F (190°C).
Cook the lasagna noodle in boiling salted water until al dente, then drain and set aside.
Heat olive oil in a skillet over medium heat and brown the ground beef until fully cooked through.
Season the beef with half of the sea salt and black pepper, then stir in the marinara sauce and baby spinach until the spinach is wilted.
In a small mixing bowl, combine the ricotta cheese, egg, garlic powder, and the remaining salt and pepper.
In a small personal-sized baking dish, spread a thin layer of the meat sauce on the bottom.
Cut the cooked lasagna noodle in half and place one piece over the sauce.
Spread the ricotta mixture over the noodle, followed by another layer of meat sauce.
Top with the remaining noodle half, the rest of the meat sauce, and the shredded mozzarella cheese.
Bake for 20-25 minutes until the cheese is melted and golden brown.
Let rest for 5 minutes and garnish with fresh chopped basil before serving.
