6 oz Wild Atlantic Salmon
300g Cauliflower florets
150g Green beans
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
Sea salt and black pepper to taste
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until they are very fork-tender, approximately 10 to 12 minutes.
While the cauliflower is steaming, pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is golden and crisp, then flip and cook for another 3 to 4 minutes.
Steam the green beans for 5 to 6 minutes in a separate basket or during the last few minutes of the cauliflower steaming until they are bright green and crisp-tender.
Drain the cauliflower thoroughly and place it in a bowl or food processor with the minced garlic, the remaining olive oil, and a pinch of salt.
Mash or process the cauliflower until it reaches a smooth and creamy consistency.
Plate the garlic mashed cauliflower first, top with the seared salmon fillet, and serve the steamed green beans alongside.
