Seared Salmon Fillet with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with garlic-infused cauliflower mash and tender steamed green beans, finished with a bright squeeze of zesty lemon.
INGREDIENTS
9 ounces Wild Atlantic Salmon fillet
3 cups Cauliflower florets
1.25 cups fresh Green Beans
1 teaspoon Extra Virgin Olive Oil
1 clove Garlic, minced
Sea salt and black pepper to taste
Fresh lemon wedges for serving
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, trim the ends of the green beans and add them to the steamer for the last 5 minutes of cooking until crisp-tender.
Pat the salmon fillet dry with paper towels and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Transfer the steamed cauliflower to a bowl or food processor, add the minced garlic, and mash or pulse until smooth and creamy.
Plate the garlic mashed cauliflower alongside the steamed green beans and the seared salmon.
Serve immediately with a fresh squeeze of lemon juice over the fish.
