Seared Salmon with Steamed Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon served with garlic-infused cauliflower mash and tender steamed asparagus, finished with a squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Salmon Fillet
2 cups Cauliflower Florets
1 cup Asparagus Spears
1 tsp Avocado Oil
1 tsp Ghee
1 clove Garlic
PREPARATION
Place cauliflower florets and peeled garlic clove in a steamer basket over boiling water and steam until very tender, about 10-12 minutes.
While cauliflower steams, trim the woody ends off the asparagus and add them to the steamer for the last 4-5 minutes until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat avocado oil in a non-stick skillet over medium-high heat until shimmering.
Place salmon in the pan skin-side up and sear for 4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until desired doneness.
Transfer the steamed cauliflower and garlic to a blender or food processor, add the ghee, and pulse until smooth and creamy.
Plate the garlic mashed cauliflower alongside the steamed asparagus and top with the seared salmon fillet.
