In a small bowl, combine the garlic powder and nutritional yeast, then toss the tofu cubes in the mixture to coat evenly.
Heat the remaining olive oil in a large non-stick skillet over medium-high heat.
Add the tofu cubes to the skillet and sear for 3-4 minutes per side until each face is golden brown and crispy.
Reduce the heat to low, pour the tamari over the tofu, and toss quickly to glaze the cubes before removing from heat.
Plate the crispy tofu alongside the roasted vegetables and serve immediately.
