Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared wild sockeye salmon served over a velvety cauliflower mash with garlic-sautéed green beans and a bright, zesty finish.
INGREDIENTS
7 oz Wild Sockeye Salmon
1.5 cups Cauliflower florets
1 cup Green beans
1 tsp Avocado oil
2 cloves Garlic, minced
1 tbsp Fresh lemon juice
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until they are very tender, about 10-12 minutes.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the avocado oil in a medium non-stick or cast-iron skillet over medium-high heat.
Place the salmon in the hot skillet and sear for 4-5 minutes until the skin is golden and crisp, then flip and cook for another 2-3 minutes until desired doneness.
Remove the salmon from the pan and set it aside to rest.
In the same skillet, add the green beans and minced garlic, sautéing for 3-5 minutes until the beans are tender-crisp and the garlic is fragrant.
Transfer the steamed cauliflower to a blender or food processor and pulse with a splash of water and half the lemon juice until it reaches a smooth, velvety consistency.
Spread the cauliflower mash onto a plate, top with the seared salmon and garlic green beans, and drizzle the remaining lemon juice over the fish before serving.
