Garlic Parmesan Mashed Potatoes
Pan-seared chicken breast served over creamy garlic-infused mashed potatoes finished with a nutty parmesan crust.
INGREDIENTS
5 oz Chicken breast
0.5 medium Russet potato
2 tbsp Plain Greek yogurt
1 tbsp Parmesan cheese
0.25 tbsp Grass-fed butter
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Olive oil
1 tsp Fresh chives
PREPARATION
Peel the potato and dice into one-inch cubes before placing in a pot of cold water.
Bring the water to a boil and cook the potatoes for 12 minutes or until they are fork-tender.
Season the chicken breast with half of the sea salt and black pepper on both sides.
Heat the olive oil in a skillet over medium heat and sear the chicken for 6 minutes per side until golden and cooked through.
Mince the garlic and melt the butter in a small saucepan, sautéing the garlic for 60 seconds until fragrant.
Drain the potatoes and return them to the pot, then mash thoroughly with the Greek yogurt, garlic butter, and parmesan cheese.
Slice the chicken and serve it immediately over the fluffy mashed potatoes, garnished with freshly chopped chives.
