Seared Salmon with Steamed Green Beans and Sweet Potato Mash
Pan-seared wild salmon served over a creamy sweet potato mash with a side of crisp steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
7.4 oz Wild Salmon Fillet
100g Sweet Potato, cubed
100g Fresh Green Beans
1 tsp Olive Oil
1 tsp Ghee
1 tbsp Fresh Lemon Juice
PREPARATION
Peel and chop the sweet potato into 1-inch cubes, then boil in a pot of water for 10-12 minutes until tender.
While potatoes boil, place a steamer basket over another pot of simmering water and steam the green beans for 5-6 minutes until bright green and crisp-tender.
Pat the salmon dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side up for 4 minutes, then flip and cook for another 3 minutes until golden and cooked through.
Drain the sweet potatoes and mash them thoroughly with the ghee until smooth and creamy.
Plate the sweet potato mash and green beans alongside the seared salmon, finishing the dish with a fresh squeeze of lemon juice.
