Dill-Crusted Salmon with Roasted Asparagus
Oven-roasted salmon fillets topped with a vibrant fresh dill and lemon zest crust, served alongside crisp-tender asparagus spears.
INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus spears
1 tsp Extra virgin olive oil
1 tbsp Fresh dill
1 tsp Lemon zest
1 tsp Lemon juice
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
Finely mince the fresh dill and garlic, then combine them in a small bowl with the lemon zest and half of the olive oil.
Prepare the asparagus by trimming the woody ends and placing the spears on one side of the baking sheet.
Drizzle the remaining olive oil and the lemon juice over the asparagus, tossing gently to ensure even coating.
Place the salmon fillet on the other side of the baking sheet and press the dill and garlic mixture firmly onto the top of the fish to create a crust.
Season both the salmon and the asparagus with the sea salt and black pepper.
Roast in the center of the oven for 12 to 15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender and slightly browned.
Serve immediately while hot, garnished with an extra sprig of fresh dill if desired.
