Lentil Walnut Loaf with Steamed Green Beans and Mashed Cauliflower
Oven-baked lentil and walnut loaf served alongside smooth cauliflower mash and green beans, finished with a savory glaze for a satisfyingly toasted crust.
INGREDIENTS
1 cup Cooked Brown Lentils
3 tbsp Nutritional Yeast
1.5 cups Cauliflower florets
1 cup Green Beans
0.5 tbsp Chopped Walnuts
1 tsp Flaxseed Meal
2 tbsp Minced Onion
1 clove Garlic
PREPARATION
Preheat your oven to 375°F and line a small individual loaf pan with parchment paper.
In a large bowl, mash the cooked lentils with a fork until about half of them are broken down into a paste.
Stir in the nutritional yeast, chopped walnuts, flaxseed meal, minced onion, and minced garlic until well combined.
Press the lentil mixture firmly into the loaf pan and bake for 25-30 minutes until the edges are firm and the top is slightly browned.
While the loaf bakes, steam the cauliflower florets until they are very tender, then blend or mash them until smooth and creamy.
Steam the green beans for 5-7 minutes until they are bright green and crisp-tender.
Allow the loaf to cool for 5 minutes before slicing and serving with the mash and green beans.
