Roasted portobello caps overflowing with a savory herb-turkey filling, finished with a tangy balsamic glaze that adds a bright, velvety finish to every bite.
INGREDIENTS
2 large Portobello mushroom caps
8 oz Ground turkey
1 large Egg
1 cup Fresh spinach
1 clove Garlic
1 tsp Dried oregano
1 tsp Dried basil
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Extra virgin olive oil
1 tbsp Balsamic glaze
PREPARATION
Preheat oven to 400°F and line a baking sheet with parchment paper.
Clean mushroom caps with a damp cloth and remove the stems.
In a medium bowl, combine ground turkey, egg, chopped spinach, garlic, oregano, basil, salt, and pepper until well incorporated.
Brush the exterior of the mushroom caps with olive oil and place them gill-side up on the prepared baking sheet.
Divide the turkey mixture evenly between the caps, mounding it slightly in the center and pressing down to secure.
Bake for 22-25 minutes until the turkey is cooked through to an internal temperature of 165°F and the mushrooms are tender.
Remove from the oven and drizzle each stuffed cap with the balsamic glaze before serving warm.
