Paneer Tikka Masala with Basmati Rice
Sautéed paneer cubes simmered in a velvety, spiced tomato and Greek yogurt sauce served over fragrant basmati rice.
INGREDIENTS
2 oz paneer
1.25 cup non-fat Greek yogurt
0.5 cup tomato puree
0.25 cup cooked basmati rice
0.5 tsp avocado oil
0.5 cup diced yellow onion
1 tsp minced ginger
1 tsp minced garlic
1 tsp garam masala
0.5 tsp turmeric
0.5 tsp cumin
0.25 tsp sea salt
0.25 tsp black pepper
2 tbsp fresh cilantro
PREPARATION
In a small bowl, whisk 0.25 cup of the Greek yogurt with the turmeric, cumin, sea salt, and black pepper.
Toss the cubed paneer in the yogurt mixture until evenly coated and set aside to marinate for 10 minutes.
Heat the avocado oil in a large skillet over medium heat and sauté the diced onion until translucent and soft.
Add the minced ginger, garlic, and garam masala to the skillet, stirring constantly for 1 minute until fragrant.
Reduce the heat to low and slowly whisk in the remaining 1 cup of Greek yogurt and the tomato puree until a smooth sauce forms.
Gently fold the marinated paneer cubes into the sauce and simmer for 5 to 7 minutes until the sauce has thickened slightly.
Place the warm cooked basmati rice in a bowl, top with the paneer tikka masala, and garnish with fresh cilantro.
