6.5 oz Wild Sockeye Salmon
125g Sweet Potato
100g Green Beans
1.5 tsp Extra Virgin Olive Oil
1 clove Garlic
1 tsp Lemon Juice
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until tender, approximately 10-12 minutes.
Drain the sweet potato and mash until smooth, seasoning with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and place the salmon skin-side down.
Sear the salmon for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until the center is just opaque.
Remove the salmon from the pan and add the remaining oil along with the green beans and minced garlic.
Sauté the green beans for 3-4 minutes until they are tender-crisp and the garlic is fragrant.
Plate the salmon atop the sweet potato mash with the green beans on the side, finishing the dish with a fresh squeeze of lemon juice.
