Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon and garlic-sautéed green beans served over nutty brown rice, finished with a squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Sockeye Salmon fillet
1/3 cup cooked Brown Rice
1 cup fresh Green Beans, trimmed
2 cloves Garlic, minced
1 tsp Avocado Oil
1 tbsp fresh Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4-5 minutes until golden brown.
Flip the salmon and cook for another 3-4 minutes until the skin is crisp and salmon is cooked to your preference.
Remove salmon from the pan and set aside to rest.
In the same skillet, add the remaining oil and the green beans, sautéing for 3 minutes until vibrant.
Add the minced garlic to the beans and cook for 1 minute until fragrant, being careful not to burn the garlic.
Warm the pre-cooked brown rice and plate it alongside the green beans and salmon.
Drizzle the entire dish with fresh lemon juice before serving.
