1 tbsp fresh lime juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Slice the bell pepper, red onion, and zucchini into bite-sized pieces and toss them on the baking sheet with half of the olive oil, sea salt, and black pepper.
Roast the vegetables for 20 minutes until they are tender and show light golden-brown edges.
While the vegetables roast, season the chicken breast with garlic powder, smoked paprika, and the remaining sea salt and black pepper.
Heat the remaining olive oil in a large skillet over medium-high heat and sear the chicken for 6 to 7 minutes per side until fully cooked.
