Preheat your air fryer to 400°F (200°C).
Cut the Russet potato into thin, uniform fries and pat them dry with a paper towel to ensure maximum crispiness.
In a bowl, toss the potato fries with half of the olive oil, garlic powder, and half of the sea salt.
Place the fries in the air fryer basket in a single layer and cook for 15-20 minutes, shaking halfway through, until golden brown.
While the fries are cooking, heat the remaining olive oil in a large skillet over medium-high heat.
Add the sliced bell peppers and onions to the skillet, sautéing for 4-5 minutes until they are tender and slightly charred.
Push the vegetables to the side of the pan and add the thinly shaved sirloin steak, seasoning with the remaining salt and black pepper.
Cook the steak for 2-3 minutes until browned, then toss with the vegetables.
Once the fries are done, pile the steak and vegetable mixture on top of the fries in the air fryer basket.
Sprinkle the shredded provolone cheese over the top and air fry for an additional 1-2 minutes until the cheese is melted and bubbly.
